1. Preheat the oven to 350° F
2. Prepare your pan with either cooking spray or baking paper
3. In a large mixing bowl, combine the dry ingredients (oat flour, stevia, baking powder, vanilla powder)
4. In another bowl, mix the milk, ripe bananas, peanut butter, egg and vegetable/neroli oil
5. Add the wet mixture to the dry mixture while stirring and add the half of the chocolate chips
6. Pour the mixture into your pan and sprinkle the rest of the chocolate chips on the top
7. Bake for 40-50 minutes
8. Let it cool down in the pan for 15-20 minutes
9. Ready to serve… Enjoy!
~ I prefer adding the wet ingredients one by one after mixing the dry ingredients instead of mixing them in a separate bowl. After the dry ingredients are combined, I pour the milk to the mixture while stirring and add the rest in the following order; peanut butter, vegetable oil, bananas and finally the egg.
~ After baking about 40-45 minutes, I switch off the oven without opening. I let the baked banana bread stay in the oven (switched off) for about 10-15 minutes. Finally, I take it out and let it cool about 20-30 minutes before serving.
~ Even though the recipe requires the half of the chocolate chips inside and the other half on the top, I prefer 2/3 inside and 1/3 on the top.
